These are superheroes in burger form. I love Quinoa and combining it with some lean freshly ground chicken breast is a genius combination. It’s just bursting with protein!!
Chicken mince is quite solid and doesn’t crumble as easily as other minces so it doesn’t need much binding agents (e.g. eggs, breadcrumbs) The Quinoa bulks out the patty allowing you to have a bigger bite in your burger. They pack a huge punch of flavour with garlic and mustard on the list of ingredients. I made these on a whim for dinner and loved them so much that they have been featuring heavily at lunch times. They freeze easily so you can pre-make them on a Sunday and just grab one out of the freezer for lunch, pop in the microwave and juicy chicken patties with some salad ahoy!
Ingredients
500g Chicken breast mince (ask your local butcher to mince fresh chicken breasts for you)
1 cup cooked quinoa (I cook mine with a dash of Herbamare salt)
2 tablespoons wholegrain mustard
Handful of chopped parsley
1 clove grated garlic
Salt and Pepper to taste
Combine all ingredients in a mixing bowl.
Separate into patties. I got 5 large ones, you can makes 10 smaller ones if you have mini mouths to feed
Pan fry for 5 minutes either side until cooked through. Serve with your favourite salad So simple!
